Chicken and Sausage
Gala
Ingredients:
½ green pepper chopped, 1 small onion chopped,
1 small dry sausage or chorizo sliced, 2 tbsp olive oil, 1 chicken
breast cut into 1-inch cubes, 1 14.5 oz can of diced tomatoes
with jalapeno peppers, 1 tsp oregano, 1 tsp basil, ½ tsp
thyme,
1 14.5 oz can of kidney beans, 1 can chicken broth, 1 package
Kashi whole grain Pilaf
Cooking Instruction:
Sauté the pepper, onion, and sausage in olive oil until the
onion and pepper are soft. Add the chicken and cook until the chicken
is no longer pink. Add the tomatoes, oregano, basil, and thyme,
cover and cook for 25 minutes. Remove the lid and add the beans.
Simmer covered for another 20 minutes. (Optional: Grate cheddar
or Parmesan cheese on top during the last 10 minutes of cooking.)
In another pan heat the chicken broth to boiling. Add the Pilaf,
cover and simmer for 20 to 25 minutes. Serve the chicken and sausage
mixture over the Pilaf and serve with a garden salad.
