Muoio reminisces about a classic athlete's dinner!

Runner's
Delight
Ingredients:
1 cup White Rice
3/4 large can Bush's Vegetarian Baked Beans
1/4 small jar Santa Fe Packing Company Salsa
grated Sharp Cheddar Cheese
Cooking Instruction:
Boil the white rice.
After rice is cooked, spread it on a large
plate.
Drain some of the sauce from the can then
scoop 3/4 of a large can Bush's Baked Beans and spread over rice.
Pour salsa evenly
Grate cheese over rice, beans, and salsa
creation.
Bake in pre-heated oven at 400 degrees for
10 minutes or until cheese is completely melted and showing a
brownish color.
Serving Instruction:
Scoop into individual bowls. Eat happily
with a spoon. Fill your belly with delight while saving your pocketbook
lots of bucks!

Nothing fancy here,
Runner's Delight is the meal most
responsible for keeping me alive during my previous days in Seattle
during 2001. It is also the meal that caused my former roommate,
Josef Johansen, to nominate me for the worst co-habitator of all-time
award. No matter, Runner's Delight
is the dinner of frugal athletic champions the world
over. Delicious, nutricious, and proteinerific you can't
go wrong!
