Pork Cutlets with Swiss Chard
and Penne Pasta

Ingredients:
pork loin sliced into thin cutlets, salt, pepper, flour, bread crumbs, milk, vegetable or peanut oil, Swiss chard, 1 large onion sliced, 1 frying pepper chopped, 1 jalapeno pepper chopped, 4 tbsp olive oil, penne pasta, red pasta sauce, Parmesan cheese

Cooking Instruction:
Salt and pepper cutlets to taste. Dust cutlets with flour, dip into milk, and cover with bread crumbs. Place cutlets in refrigerator for 30 minutes. Slice onion and cut Swiss chard into 4 inch pieces. Sauté onions in the olive oil until soft. Add the Swiss chard, cover pan, cook until the Swiss chard is soft. Place the pasta in salted boiling water and cook as directed on the box. Remove the cutlets from the refrigerator and fry in the vegetable oil until golden brown on both sides, turning as needed. Heat the pasta sauce and pour over the pasta.

Serve with a garden salad.

OPTIONAL: Grate Parmesan cheese over pasta and Swiss chard.
