Chili di Muoio
Ingredients:
2
lb - 4 lb Ground Beef Meat
1 - 2 Cups Frozen Sweet Corn (I like Trader Joe's
frozen roasted sweet corn)
3 - 5 Small Cans Diced tomatoes (I like jalapeno
variety, can substitute stewed tomatoes as well but flavored ones
better than plain)
1 Large Can or 3 Small Cans Kidney (Red) Beans
1 Green Jalapeno Pepper or Habanero
finely chopped (using seeds and membrane is fine but slightly
hotter)
1/2 -1 Large Red Onion finely chopped
1/2 Clove of Garlic finely chopped or squeezed
through the press
1 pat Butter
Chili Powder
Garlic Powder
Cumen Powder
Salt and Pepper
Hot Sauce (whatever kind you prefer)
Very Hot and Spicy Option: 1 Small
Finely Chopped Orange Habanero Pepper (for dragons or
those with an iron tongue)
Cooking Instruction:
Brown 2 lb - 4 lb of ground beef meat in pan and sprinkle coating
of chili powder. Sprinkle salt and pepper. Drain oil from finished
meat.
In separate pan, saute 1-2 cups frozen sweet corn with pat of
butter and sprinkle some salt and pepper
Add cooked meat and cooked corn to crock pot with:
Diced tomatoes
Kidney (red) beans
Green jalapeno pepper
1/2 -1 large red onion finely chopped
1/2 clove of garlic finely chopped or squeezed through the press
Sprinkle lots of chili powder
Sprinkle lots of garlic powder
Sprinkle good amount of cumen powder
Sprinkle some salt (and again later just before you serve)
Pour some hot sauce (you can add some later for as much hot taste
as you like)
Stir everything to mix it nice and good
For real hot chili add 1 finely chopped little orange
habanero pepper with the above. This is very hot so don't go crazy
and add more you freak!
Crock it for a couple hours or more on high. It usually gets
a little brown on the sides of the crock pot when it is approaching
deliciousness. Taste as you go. Sprinkle more chili powder or
salt if not enough taste. Pour a little more hot sauce if you
need the fire.
How much of everything you use totally depends on what you like
and how much you want to make. You can go all meat, all beans,
or some combination. You can also freeze it and put it in the
oven later if you desire so don't be afraid to be a hearty pot.
Serve atop a bed of white rice or use fench bread for dipping.
Serving Instruction:
Serve hot in individual bowls with grated cheddar or pepper jack
cheese on top of each serving. The cheese will melt nicely if
you mix it around. Serve with dallop sour cream or chopped scallions
if you enjoy that sort of thing. If it tastes like shit just add
some salsa and no one will be the wiser.
